Last Tuesday night, Emily had three of her friends over for a sleepover, and I needed something that could feed a small army without me spending hours in the kitchen. That's when I remembered this Italian sausage baked ziti recipe that's been my secret weapon for years!

Sausage baked ziti

Honestly? This dish saved me. While the girls were upstairs giggling about who-knows-what, I had this bubbling away in the oven, filling the whole house with the most amazing smell. When I called them down for dinner, you should've seen their faces – they demolished the entire pan! One of Emily's friends even asked if I could teach her mom how to make it. (I sent the recipe home with her the next morning.)

If you're looking for comfort food that doesn't require a culinary degree, you're in the right place. This baked ziti with sausage is one of those recipes that makes you look like a kitchen rockstar while being ridiculously simple to pull together. And the best part? It's totally freezer-friendly, so you can make it ahead when life gets crazy.

Speaking of easy pasta dishes that never disappoint, my old-fashioned baked macaroni and cheese is another family favorite that'll win over any crowd!

Why You Will Like This Italian Sausage Baked Ziti

  • Super quick prep – We're talking 10 minutes of actual work before it goes in the oven
  • Loaded with flavor – The Italian sausage brings so much taste that you don't need a ton of extra seasonings
  • Three types of cheese – Because more cheese is ALWAYS better (don't try to convince me otherwise!)
  • Perfect for meal prep – Make two and freeze one for those nights when cooking feels impossible
  • Kid-approved – Even picky eaters can't resist all that melty cheese
  • Great for feeding a crowd – This recipe serves 6 easily, but I've doubled it for potlucks more times than I can count

Ingredients For Your Baked Ziti With Sausage

For The Pasta:

  • 16 oz dried ziti pasta (penne or rigatoni work great too!)
  • 1 tablespoon olive oil
  • Salt for pasta water

For The Sausage Mixture:

  • 1 lb ground Italian sausage (I usually go with mild, but hot is amazing if you like heat)
  • 4 cloves garlic, minced
  • 32 oz marinara sauce (Rao's is my go-to brand)
  • ½ teaspoon red pepper flakes

For The Cheese Layer:

  • 3 cups shredded mozzarella cheese, divided
  • ½ cup Pecorino Romano cheese, divided
  • Minced fresh parsley for garnish

How To Make Italian Sausage Baked Ziti

Prepare Your Workspace

  1. Preheat your oven to 350°F.
  2. Butter a 9x13 inch baking dish generously and set it aside. (I learned the hard way that skipping the butter makes cleanup way harder!)

Cook The Pasta

  1. Bring a large pot of salted water to a rolling boil.
  2. Add the ziti and cook it for about a minute less than the package directions say for al dente. This is important because the pasta will continue cooking in the oven, and you don't want mushy ziti!
  3. Drain the pasta and give it an occasional stir while you're working on the sauce. Nothing worse than pasta that sticks together into one giant clump.

Brown The Sausage

  1. Heat a large deep skillet over medium-high heat until it's nice and hot.
  2. Add the olive oil and let it shimmer for just a second.
  3. Crumble in the Italian sausage and cook it for 5-6 minutes, breaking it up with your spoon as it browns. You want it cooked all the way through with some nice caramelization on those bits.
  4. Drain off the excess fat (I usually just tilt the pan and spoon it out).
  5. Return the cooked sausage to the skillet and toss in that minced garlic. Stir it around for about 30 seconds until your kitchen smells incredible.

Build The Sauce

  1. Pour in the entire jar of marinara sauce.
  2. Sprinkle in the red pepper flakes and stir everything together really well.
  3. Lower the heat to maintain a gentle simmer.
  4. Let this simmer away for about 10 minutes. The sauce will thicken up slightly and all those flavors will get to know each other. (I sometimes sneak a taste here with a piece of bread – quality control, you know?)

Combine Everything

  1. Take the skillet off the heat.
  2. Add your cooked ziti to the sausage and sauce mixture. Stir it all together until every piece of pasta is coated in that gorgeous sauce.

Layer And Bake

  1. Scoop half of the ziti mixture into your prepared baking dish and spread it out evenly.
  2. Sprinkle half of the mozzarella and half of the Romano cheese over the top.
  3. Add the remaining ziti mixture on top of the cheese layer.
  4. Finish with the rest of your mozzarella and Romano cheese. Don't be shy with it!
  5. Pop the dish in your preheated oven, uncovered, for 20 minutes. You'll know it's ready when it's hot and bubbly and the cheese on top is getting all golden and gorgeous.

Serve

  1. Pull it out of the oven and resist the urge to dig in immediately (I know, it's hard!). Let it sit for 5-10 minutes so everything can set up a bit.
  2. Sprinkle some fresh parsley over the top and serve it up!

Storage And Reheating Tips

I make this sausage baked ziti all the time, so I've figured out the best ways to keep it tasting fresh.

Refrigerator Storage: Let the baked ziti cool completely, then cover the dish tightly with foil or transfer portions to airtight containers. It'll stay good in the fridge for 3-4 days. Emily and I actually love it as leftovers – sometimes I think it tastes even better the next day when all the flavors have really had time to hang out together.

Freezing Instructions: This is where this recipe really shines! You can freeze it before OR after baking. If you're freezing it before baking, assemble everything up through the layering step, cover it super tight with a double layer of foil, and freeze for up to 3 months. When you're ready to bake, you can either thaw it overnight in the fridge and bake as directed, or bake it straight from frozen at 350°F for 60-75 minutes.

Reheating: For individual portions, the microwave works fine – just heat it in 1-minute intervals until it's warmed through. For the whole dish, cover it with foil and reheat in a 350°F oven for 15-20 minutes.

My Best Tips For Perfect Baked Ziti With Italian Sausage

Cheesy baked ziti

Here's what I've learned from making this recipe about a million times:

Don't overcook the pasta initially. I can't stress this enough! The ziti will continue cooking in the oven, so you want it slightly undercooked when you drain it. Trust me on this one – I've made the mistake of perfectly cooked pasta that turned into mush after baking.

Fresh Romano makes a difference. Pre-shredded mozzarella is totally fine (I use it all the time), but get a wedge of Pecorino Romano and grate it yourself. The flavor is SO much better than the pre-grated stuff.

Make it your own! Want to sneak in some veggies? Add some spinach or diced bell peppers when you're cooking the sausage. Emily won't touch mushrooms, but if your family likes them, they're great in this dish.

Mix up the meat. Ground beef works if you can't find Italian sausage, or try a combination of half beef and half sausage. I've even made it with ground turkey when I was trying to be a bit healthier (it was still delicious, I promise).

The make-ahead trick: Assemble this up to 24 hours before you need it, cover it, and keep it in the fridge. Just add 5-10 minutes to the baking time since it'll be starting out cold.

Italian Sausage Baked Ziti FAQs

Can I freeze Italian sausage baked ziti?

Yes! Assemble the ziti (before baking), cover tightly with foil, and freeze for up to 3 months. Bake from frozen at 350°F for 60-75 minutes, or thaw overnight and bake as directed.

Can I make baked ziti ahead of time?

Absolutely! Assemble the dish up to 24 hours in advance, cover, and refrigerate. Add 5-10 minutes to the baking time if baking straight from the fridge.

What can I use instead of Italian sausage?

Ground beef, ground turkey, or ground chicken work well. You can also use a mix of beef and sausage, or make it vegetarian with mushrooms or plant-based crumbles.

How long does leftover baked ziti last?

Store covered in the refrigerator for 3-4 days. Reheat individual portions in the microwave or cover with foil and reheat in a 350°F oven for 15-20 minutes.

Chef Tips:
  1. I've estimated this recipe serves 6, but you're free to divide the baking dish up into as many servings as you'd like.
  2. Other short-cuts of pasta can be substituted for the ziti. Penne, rigatoni, farfalle, campanelle, etc are great options.
  3. Pre-shredded mozzarella works just fine for this recipe, but I do recommend using a wedge of Pecorino Romano and shredding/grating it yourself.
Freezing Instructions: Assemble the ziti (before baking), cover tightly with foil, and freeze for up to 3 months. Bake from frozen at 350°F for 60-75 minutes, or thaw overnight and bake as directed.
Make Ahead: Assemble the dish up to 24 hours in advance, cover, and refrigerate. Add 5-10 minutes to the baking time if baking straight from the fridge.
