  1. Drain the pasta and put it back in the same pot. See? One pot.
  2. Add the butter, ricotta cheese, and parmesan right into the hot pasta. The residual heat will start melting everything together.
  3. Squeeze in the juice of one whole lemon and add the zest. I use a microplane for the zest — it gives you those tiny, even pieces that distribute through the whole dish.

Bring It All Together

  1. Stir everything until it's well combined. It might look a little thick at first — that's normal.
  2. Pour in your reserved pasta water and stir again until the sauce is silky and coats every piece of pasta.

Storage and Reheating

That said, leftovers happen. Store them in an airtight container in the fridge for up to 3 days. When you reheat, add a splash of milk and warm it on the stove over low heat. The microwave works too, but stir it halfway through so everything heats evenly.

I wouldn't recommend freezing this one. The ricotta texture changes after freezing and thawing, and it just won't be the same.
