Preparing The Dough

  4. Place your dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise in a warm spot until it doubles in size. This takes about 90 minutes. I usually stick mine on top of my dryer while I'm doing laundry – the warmth helps it rise faster.
  5. Punch down the dough (Emily's favorite part – she literally punches it like she's mad at it) and let it rise again for another 45 minutes. I know this seems like forever, but trust me, this second rise makes the texture SO much better.

Shaping Your Pretzel Bites

  1. Preheat your oven to 450°F and line two baking sheets with parchment paper. Don't skip the parchment – these babies will stick otherwise.
  2. Divide the dough into 4 equal pieces. Roll each piece into a long rope, about 20-24 inches. My ropes are never perfectly even, and that's totally fine. We're going for homemade charm here, not perfection.
  3. Cut each rope into bite-sized pieces – about 1 inch each. You should get around 60-70 pieces total. They look tiny now, but they puff up when you boil and bake them.

The Baking Soda Bath (The Secret Step)

  1. Bring 6 cups of water and 3 tablespoons of baking soda to a boil in a large skillet or pot. This is the magic step that gives pretzels their signature taste and color. Don't skip it!
  2. Drop the pretzel bites into the boiling water using a slotted spoon – about 8-10 at a time. Let them hang out in there for exactly 45 seconds. They'll puff up a bit and float to the top.
  3. Remove them with your slotted spoon and let them drain for a second before placing them on your prepared baking sheets. Space them about an inch apart.

Finishing Touches

  1. Brush each pretzel bite with beaten egg. This creates that gorgeous golden-brown shine when they bake.
  2. Sprinkle generously with coarse salt. I like to really go for it here – that salty-sweet combo is what makes these so addictive.
  3. Bake for 10-12 minutes until they're deep golden brown. Your kitchen is going to smell AMAZING right about now.
  4. Brush the hot pretzels with melted butter immediately when they come out of the oven. Use all 6 tablespoons. I'm serious. This is not the time to hold back on butter.
  5. For cinnamon sugar pretzels, skip the salt and instead roll the buttered bites in a cinnamon-sugar mixture while they're still warm.

These are best eaten fresh (obviously), but I get it – sometimes you need to make them ahead.

Room temperature storage: Keep them in an airtight container for up to 2 days. They'll soften a bit, but a quick reheat brings them back to life.

Reheating: Pop them in a 350°F oven for 3-5 minutes. Don't use the microwave unless you want sad, rubbery pretzels (learned that the hard way).

Freezing: This is where these really shine. Let them cool completely, then freeze in a freezer bag for up to 3 months. Reheat straight from frozen at 350°F for 5-7 minutes. They taste just as good as fresh!

Check your water temperature. Too hot and you'll kill the yeast. Too cold and nothing happens. Around 110°F is perfect – it should feel warm but not uncomfortable when you stick your finger in.

Use bread flour if you can. All-purpose works, but bread flour gives you that chewier texture that's closer to what you get at the mall.

Method
 

  1. In a small bowl, mix together yeast and warm water. Let start to work and activate for 10 minutes. Stir in honey.
  2. In a large mixing bowl, add flour and salt. Stir in activated yeast mixture. Using a dough hook, knead for about 5-6 minutes.
  3. Place dough in a lightly oiled large bowl. Cover with plastic wrap and let rise until doubled in size, about 1 ½ hours. After it has doubled in size, punch the dough and let rise again for 45 minutes.
  4. Heat oven to 450 degrees. Pour 6 cups of water into the 12-inch skillet and add baking soda. Bring to a boil over high heat.
  5. Divide the dough into 4 pieces. Roll each piece into a 20 to 24-inch long rope. Cut into bite-size pieces.
  6. Using a slotted spoon, gently place the pretzels into the boiling water for 45 seconds. Remove the pretzels with a slotted spoon and drain well. Place onto the Silpat or parchment paper-lined baking sheet.
  7. In a small bowl, beat egg to make an egg wash. Brush egg wash over pretzels. Sprinkle with coarse salt. Bake for 10-12 minutes, or until the pretzels are golden brown. Generously brush with melted butter on all sides.
  8. If making cinnamon-sugar pretzels, roll the pretzel bites into the cinnamon-sugar mixture.

Notes

These pretzel bites can be stored in an airtight container for up to 2 days. Reheat in a 350°F oven for 3-5 minutes. They can also be frozen for up to 3 months.
Serve with cheese sauce, honey mustard, or for a sweet version, roll in cinnamon-sugar.
